SLOVAK BRYNDZA : NATIONAL PRODUCT WITH PROTECTED GEOGRAPHICAL INDICATION IN CONTEXT THE EUROPEAN QUALITY

Abstract:
Bryndza is a product which due to its uniqueness and characteristic features belongs to the national specialities. It is part of the Slovak history. It can be consumed eather fresh or be used for many other kinds of meals typical of the Slovak Cuisine. Our research results show that despite the strong influence of new ways of life connected with fast food eating habits, bryndza has still a very important place on the food market. Traditional Slovak bryndza produced of non-pasteurized sheep's milk can only be produced in Slovakia. On the other hand, only pasteurized bryndza can be exported abroad. A disadvantage of non-pasteurized bryndza is the date of expiry which is much shorter than at the pasteurized one. Exporting bryndza to the Czech Republic and Hungary as well as the on-going negotiations with Poland, Germany and Austria point out to the fact that there is much interest in this product shown also in other countries of the EU as well as in transnational chains operating in Slovakia. Bryndza producers' efforts to produce a high quality product according to the EU Quality Policy demands resulted in the interest to get "Protected geographical indication (PGI)" on the international level and the SK Quality Label on the national level. The annual bryndza production is about 3,000 t out of which 80 % is placed on the local market and distributed through chains, plant stores, restaurants and typical Slovak catering establishments such as Salaš and Koliba. 20 % of bryndza is placed on the foreign markets.
